Who would have thought? Green Tomato Pie is a shockingly sweet and savoury and tastes just like Apple Pie! Here’s another great recipe for all those green tomatoes at the end of harvest season that’s worth effort!

What do you do with a garden full of unripened green tomatoes? It’s easy enough to store them on the window shelf to ripen slowly, or in a brown paper bag. But did you know you can actually eat green tomatoes?

It’s true. If the tomato is light green and soft it can be eaten! In fact, it’s delicious and a food often overlooked. If you are sensitive to acidic food, just be aware that green tomatoes are more acidic than ripe ones.

My favourite things to make with green tomatoes are my Nana’s green tomato mincemeat, green tomato salsa similar to salsa verde, chow chow (perfect in potato salads) and fried green tomatoes.

But my absolutely new favourite thing to do is to make Green Tomato Pie Filling! Two of my favourite things combined and another perfect excuse to bake a pie.

GREEN TOMATO PIE

When it comes to baking, I’m all about pies and cookies. You’ll find lots of pie and cookie recipes here at Wandering Hoof Ranch.

This particular recipe comes from my great grandmother. It’s an old fashioned homestead pie from the prairies. Great Grannie had a dairy farm and drooled over the plentiful fruit trees when she moved out to the west coast.

In fact, green tomato pies are often thought of as the apple pies of summer. Try adding apple pie spice to really create that festive fall flavour in the middle of summer. Or better yet, spread Apple Butter on the bottom of the pie crust before adding tomatoes!

GREEN TOMATO PIE FILLING

This green tomato pie filling is perfectly paired with a double all butter pie crust to make a sweet and savoury summer pie you’ll love.

Simply thinly slice the green tomatoes and fill a lined 9 inch pie crust. Create a sweet tomato mixture in a large bowl by combining sugar, salt, flour and lemon rind and toss to coat the tomatoes in the pie plate.

Sprinkle with lemon juice and dot with butter. Put on top crust and make steam vents. Bake in a hot oven at 450 degrees for only 10 minutes then reduce to 350 and bake for another 30 minutes or longer until the crust is golden brown.

Use this pie crust recipe for a guaranteed amazing green tomato pie. Our pie dough recipe is an all butter pie dough recipe for a guaranteed flaky crust like no other. Using a rolling pin, roll out the chilled dough and line the pie dish.

This recipe is enough for two double crust pies, and calls for a pound of butter. Plus learn an amazing baking hack involving a food processor!

Green Tomato Pie

Shocklingly sweet and savoury, just like Apple Pie!

  • Pie Pan

Ingredients
  

  • 3 Cups Green Tomatoes Sliced
  • 2/3 Cups White Sugar
  • 3 Tbsp White Flour
  • 1/4 Tsp Salt
  • 1/3 Cup Lemon Juice
  • 4 Tsp Lemon Rind Grated
  • 2 Tbsp Butter

Instructions
 

  • Prepare Pie Crust according to recipe directions
  • Fill Pastry lined pie plate with sliced tomatoes
  • Combine sugar, salt, flour and lemon rind
  • Sprinkle with lemon juice
  • Dot with butter
  • Put on top crust and make steam vents
  • Bake in a hot oven at 450 for 10 minutes
  • Reduce heat to 350 and bake 30 minutes longer or until crust is golden brown
