EASY PIE RECIPES

When it comes to baking, my favourite deserts have and will always be pies and crumbles baked with fresh fruit from our orchard or foraged during the summer months. Today I’m excited to share with you my favourite easy pie recipes I know you’ll soon love too.

Let’s start with the basics. Pie needs to be flaky, moist and go well with ice cream or whip cream. It needs to have fresh local ingredients, and easy to make. When you have a freezer full of summer berries and fruit, all you need is a good pastry.

It’s all about the crust for me. I grew up baking pies using vegetable shortening. On the bottom right hand side next to the oven, was a big tub of crisco. I’d go into the big walk in cupboard grab the flour and salt and get going.

It wasn’t until I found THE best pie crust recipe, that I really fell in love with the crust.

Like I said before, I grew up using vegetable shortening for fat in my pie crust like my mother taught me. This was popular during the 50’s and 60’s when her mother baked pies.

It wasn’t until I found a recipe that called for unsalted butter that I really fell in love with my pie crust.

Chilled dough is best for making flaky dough. Remove two packaged dough bags from the refrigerator. Prepare a clean workable surface on the counter top and dust with with flour. Roll the pie dough out into circles.

But you don’t need to open up a shop. Start simple by offering pies during peak holiday seasons like Thanksgiving Weekend and Christmas for anywhere from $15-$25 dollars depending on the size of pie, ingredients and your market.

Making money from your homestead should be as easy as just doing a little more of what you’re already doing because not everyone lives a simpler from scratch lifestyle!
